Yamato's Sushi vinegar is made from 100% fermented sake in Kanazawa - home of sake production. The vinegar is mixed through the cooked sushi rice. For every 250gm   of raw rice (short-grain) use 100ml of sushi vinegar and mix well while the rice is still warm.  Once the rice is cooled it can be used to prepare the sushi.
